Potato fry

Preparation time: 15 mins | Cooking time: 45 mins

Ingredients
Potatoes-4 medium
Chilli flakes-1tsp
Cumin seeds-½tsp
Fennel seeds-½tsp
Crushed coriander seeds-½tsp
Onion (sliced)-1
Curry leaves-2 sprigs
Chopped fresh coriander-1tbsp
Oil-2tbsp
Salt to taste

Method
Boil the potatoes in salted water until soft but still firm. Remove from the skin and cut into small cubes.

Heat oil in a pan, then add the chilli flakes, cumin, fennel and coriander seeds and salt and fry for 2 mins. Add the sliced onion and fry until golden brown. Then add the potatoes, curry leaves and fresh coriander.



Cover and cook for 5-7 minutes over a low heat. Serve hot. This goes very well with curd rice.

Yummy yumm potato fry..I love adding chili flakes to recipes like this..i add it even to fish fry ;)..This potato fry will be perfect with rice and chapati..

Dear Latha
I love boiled Potato fry. You are using a different seasoning than what I use and your seasoning is just too good especially the crushed coriander seeds. Some times I sprinkle small bits of crisp fried garlic.
